docs(start): update greptime-init documentation

- Update title and sidebar label to recommend Greptime as metrics storage
- Correct product name from GreptimeDB to Greptime
- Update Greptime description and GitHub link
- Adjust Docker installation instructions and FAQ
- Move greptime-init to the top of the change-db category in sidebars.json
